De Novo means to begin anew. We do not follow the old recipes; we question every step — the grain, the water, the number of distillations — and rebuild the spirit from first principles. The result is clarity you can taste.

How we distil clarity
01Serbian Wheat
Winter wheat from Vojvodina, milled fine and fermented slow.
02Seven Distillations
Seven passes through a copper column, stripping all but clarity.
03Crystal Filtration
Rested on birch charcoal, then through a fine mineral bed.
04Belgrade Water
Cut with soft artesian water drawn beneath the city.
